cotechino with fondue and white truffle

Cotechino: a large sausage, to be boiled and eaten hot with lentils or potatoer puree

Boil the cotechino in cold water for at least 90 minutes, slowly. In the meantime prepare the fondue: cut the cheese and put it in a plate with milk. Put the cheese and the milk to melt, add two egg yolks and keep on mixing the sauce. Slice the cotechino and serve with the cheese and the white truffle of Alba.
